Vegan Asian Lettuce Wraps & Spicy Peanut Sauce

What You’ll Need:

6 Large Organic Romaine or Swiss Chard
2 Cups Organic Purple Cabbage, chopped length-wise
3 Organic Spring Onions, chopped length-wise
1 Organic Cucumber, chopped length wise
1 Organic Carrot, Julienne
1/2 Cup Organic Sliced Water Chestnuts, sautéed
1 Cup Organic Bean Sprouts
11/2 Inch Organic Ginger, minced and sautéed
1 Organic Mango, sliced in length-wise strips
1 Tsp Organic Sesame Oil
1 Tsp Hoisin Sauce
1 Tbsp Organic Sesame Seeds, toasted
Optional: Organic Extra Firm Tofu, Organic Free-Range Minced Grilled Chicken or White Fish of Your Choice, sautéed with 1 tsp hoisin, salt & pepper.

Spicy Peanut Sauce

2 Tbsp Organic Crunchy Peanut Butter
1 Tbsp Organic Peanut Oil
1/2 Tbsp Organic Ginger, minced & sautéed
1 Tsp Braggs Aminos
1 Tsp Organic Sesame Oil
1/2 Tbsp Organic Raw Unpasteurized Honey
1/2 Organic Red Chilli, minced
Pinch White Pepper

Making It Happen:

1.In a large bowl, combine all raw and sautéed vegetables (as well as any protein additions) with sesame oil, hoisin sauce and sesame seeds until mixed thoroughly.
2. Divide the ingredients amongst the lettuce leaves.
3. In a small saucepan, combine and lightly heat all ingredients EXCEPT honey, until warm and mixed. Remove from heat, add honey and stir well. Pour overtop lettuce wraps and enjoy!
