What You’ll Need:

Organic Romaine Lettuce OR Organic Corn Tortillas

Vegan Taco Meat OR Fish:

2 cups (200g) Walnuts
16oz Organic Extra Firm Tofu or 1 Cup Organic Black Beans (soaked, sprouted, boiled) OR Wild Organic Cod
3 Tbsp Organic Tomato Paste
1 Tsp Organic Garlic Powder
1 tsp Organic Onion Powder
1/2 tsp Organic Cumin
1/2 tsp Organic Smoked Paprika
1/4 tsp Organic Cayenne Pepper
1/4 Tsp Organic Chipotle Pepper
2 Tbsps Organic Nutritional Yeast
1 Tbsp Olive Oil
2 Tbsp Organic Braggs Aminos
1 Tbsp Maple Syrup or Date Molasses

Making It Happen:

1. In your food processor, process all ingredients until a crumbly texture is achieved.
2. Pan fry with high heat oil spray until crispy.

Fresh Guacamole:

1 Avocado
Juice of 1 Fresh Lime
Freshly ground pepper
1 Organic Clove Garlic, minced
1/8 Red Onion, finely chopped
Himalayan crystal salt to taste

Making It Happen:

1. Mash all ingredients together, set aside

Fresh Salsa

1 Organic Jalapeno, minced
2 Cups Organic Vine Tomatoes
1/4 Organic Red Onion
1 Organic Clove Garlic, minced
2 Tsp Apple Cider Vinegar
Juice of 1-2 Organic Lemons
1/2 Cup Fresh Organic Coriander
Himalayan Salt To Taste

Making It Happen:

1. Chop and mix all ingredients together, set aside.

Cashew or Macadamia Vegan Cheese:

1/2 Cup Soaked Organic Cashew or Macadamia Nuts
1/4 Cup Organic Nutritional Yeast
Juice of 1-2 Organic Lemons
Himalayan Salt & Spice To Taste

Making It Happen:

1. Blend all ingredients, set aside

***OR for Non-Vegan Version, add your favourite organic raw milk cheese

Making It All Happen:

1. To assemble tacos: Wash fresh romaine or warm corn tortillas in the oven.
2. Distribute vegan meat or fish evenly between tortillas
3. Add toppings of your choice

Optional: you can top with some chopped cilantro and jalapeño peppers.
