Roasted Vanilla Superfood Matcha Nuts

Who doesn’t love a delicious batch of roasted nuts? These nuts are especially amazing if you are looking to pack a healthy snack to take along with you or for entertaining. The matcha also adds a delicious kick of antioxidants and mental clarity.

Makes 12 Servings
Notes: For Keto and Sugar-Free versions, sub Maple Syrup for Stevia as indicated below

What You’ll Need:

1/8 Cup Pure Matcha Powder – I use DoMatcha
3 Cups Mixed Nuts (Almond, Cashews, Hazelnuts, Walnuts, Pecans, Pistachios OR any other nut/seed of your choice)
2 Tsp Natural Vanilla
1/8 Inch Vanilla Bean (scraped)
1/4 Maple Syrup or for Sugar Free version sub: 50-60 Drops Vanilla Creme Stevia + 2 Tbsp Monkfruit Sugar (optional)
1/8 Tsp Pink Himalyan Crystal Salt
11/2 Tbsp Coconut Butter
2 Tbsp Lionsmaine Mushroom (optional)
4 Tbsp Maca (optional)
2 Tbsp Cup Ashwaganda (optional)

Making It Happen:

1. Preheat oven to 275F.
2. Lightly grease a 10×15 inch pan with coconut oil or coconut spray.
3. Melt coconut butter, matcha powder, any optional superfoods, maple syrup or stevia, vanilla, vanilla bean & salt
4. Add the nuts, and stir until well coated. Mix the with all remaining ingredients and toss to coat. Spread evenly on the prepared pan.
5. Bake for 25-30 mins in the preheated oven, stirring occasionally, until golden. Allow to cool, then store nuts in airtight containers.
