Simple Savoury Zucchini Pesto Pasta

This is one of the simplest most delicious way to enjoy pasta without all of the dense and unhealthy carbs.

4 Organic Zucchinis + 2 More Sliced in Half Moons and Grilled if Desired
1 Cup Organic Baby Arugula
Juice and Zest of 1 Lemon
Avocado Macadamia Pesto
1 Organic Avocado
1/4 Cup Organic Macadamia
1 Large Bunch Organic Italian Basil
Juice of 1 Organic Lemon
2 Organic Scallions
3 Organic Cloves Garlic
2 Tbsp Organic Roasted Tahini
2 Tbsp Organic Extra Virgin Olive Oil
Himalayan Crystal Salt to Taste
Optional Ingredients:
Add organic grilled fish, prawns, chicken and/or organic cheese.
Making It Happen
1. Prepare the zucchini noodles with either a spiralizer on the julienne setting, or use a peeler for long, linguini-shaped noodles. You can cut the pasta strands to whatever length you wish. Combine zucchini noodles in a bowl with washed arugula, lemon juice and zest set aside.
2. Blend all ingredients for pesto in a high-powered blender and blend until smooth.
3. In a large salad bowl, combine the pasta and pesto and toss together then serve immediately.
