What You’ll Need:
PEANUT LIME VINAIGRETTE:
1/4 Cup Organic Fresh Peanuts
1/4 Cup Organic Peanut Oil
1.4 Cup Organic Fresh Lime Juice
1/2 Tbsp Organic Peanut Butter
1 Tsp Organic Raw Honey
1 Tsp Braggs Aminos
1 Clove Garlic, Minced
SALAD:
1/2 Cup Organic Medjool Dates
3 Heads Organic Romaine Lettuce
3/4 Cup Organic Sweet Corn Kernels
1 Cup Organic Black Beans, Cooked
1 Avocado, Sliced
OPTIONAL INGREDIENTS:
2 Tbsp Organic Bulgarian Feta Cheese (*Vegetarian Option)
1/4 Cup Organic Chopped Roasted Peanuts
1/4 Cup Organic Corn Tortilla Strips
OPTIONAL ANIMAL PROTEIN:
2 Organic Chicken Breasts Cut In Halves (*Animal Protein Option)
1 Tbsp Chilli Powder
1 Tsp Honey
Juice of 2 Fresh Limes
Making It Happen:
SALAD: Tear & gently toss lettuces in a large bowl. Add corn, dates and black beans and half of the optional ingredients if using.
PEANUT LIME VINAIGRETTE: Process ingredients in a small food processor until almost smooth, then drizzle on top of salad and toss gently.
CAJUN CHICKEN: Rub chicken breasts all over with spices and lime juice on both sides. Grill over medium-high heat or broil until done. Slice into 1/4 inch pieces to top Salad.
