Zain’s Ultimate Vegan Protein Pancakes

Notes: To make this recipe RAW, follow all directions and rather than cooking in a frying pan, add to your dehydrator and cook until soft but firm.
What You’ll Need:
1 Scoop of Vegan Vanilla Protein Powder of Your Choice (I use Sunwarrior Vanilla) OR Sub for 4 Egg Whites + 1 Whole Egg
1 Organic Banana Mashed
1 Tsp Organic Gluten Free Baking Powder
1/2 Cup Organic Unsweetened Nut Mylk of Your Choice
1 Tbsp Coconut Butter
1 Tsp Organic Natural Vanilla OR Scrape 1 Vanilla Bean
Pinch Himalayan Crystal Salt
Organic Coconut Oil Spray for Cooking
Organic Fresh Fruit Of Your Choice, Organic Nuts or Seeds, Organic Nut Butter, Organic Raw Honey or Maple Syrup, Organic Fresh or Dried Coconut, Organic Cacao Nibs
Making It Happen:
1. Blend mashed banana and melted coconut butter until thick and frothy.
2. Slowly stir in baking powder, salt and protein powder until thick consistency is achieved.
3. In a frying pan, heat a little coconut oil in a non-stick frying pan over a medium heat. Once the pan is nice and hot, spoon in a small amount of the mixture and cook until bubbles start to appear on the surface. Flip and cook on the other side, then repeat this with the remaining mixture.
4. Once all of your pancakes are cooked, serve with toppings of choice.
