Earth Soup – Grounding

This thick, earthy soup is the perfect comfort food when you feel the need to ground and nourish your body, heart and spirit. Naturally sweet and simple to make, this soup will connect you with your root chakra and offer you a sense of calm.

What You’ll Need:

1 Organic Yellow Onion, Diced
1 Tbsp Organic Unrefined Coconut Oil
1 Medium Organic Sweet Potato or Yam
4 Organic Carrots, Chopped
1-2 Organic Parsnips, Chopped
1 Large Knob Fresh Ginger, Minced
1/2 Turmeric Root, Minced
2 Cups Organic Fresh or Packaged Coconut Cream
1 Tbsp Coconut or Brazil Nut
1 Cup Organic Vegetable Broth
1/2 Tsp Organic Fresh Nutmeg, Grated
1 Tsp Organic Curry Powder
1 Tsp Organic Cinnamon
1/2 Tsp Organic Black Pepper
1 Tsp Ashwaganda Powder
3-5 Organic Brazil Nuts, Fresh Watercress, Red Pepper Flakes and Coconut Yogurt (optional) to Top!
Himalayan Salt To Taste

Making It Happen:

1. In a large pot set at medium heat, warm coconut oil and begin sautéing onion, carrots, sweet potato, ginger, turmeric and garlic. Stir occasionally for 10 minutes or until the onion is translucent.
2. Add vegetable broth, coconut cream, coconut/Brazil nut butter, salt, pepper, nutmeg, cinnamon, and curry. Bring pot to a boil. Reduce heat to a simmer, cover the pot, and allow the vegetables to cook in the liquid for 15-20 minutes, or until the carrots and sweet potato are tender.
3. Remove pot from heat and decant into a high-speed blender. Purée soup until nice and creamy.
4. Serve into bowls and garnish with Brazil nuts & Fresh Parsley.
