Zain’s Dark Chocolate Nut Butter Cups
These unbelievable raw, vegan, sugar-free dark chocolate nut butter cups take less than 10 minutes to prepare and are full of healthy, healing, unprocessed fat and contain no GMO’s, colours, preservatives or artificial flavours like those found pre-packaged.
The super fun part is to choose your nut or seed butter of choice and play!!! I have tried all versions of nut and seed butters and still have a hard time picking a favourite: Peanut, Almond, Cashew, Tahini, Pumpkin Seed, Coconut Butter, Hazelnut Butter, Walnut Butter…I’m drooling just writing this post.
What You Need:
1/2 Cup Natural Organic Coconut or Cacao Butter
1/2 Cup Raw Cacao Powder
1/16 Tsp Organic Natural Vanilla
Pinch Himalayan Crystal Salt
Sweetener of Your Choice (I have played with Vanilla Creme Stevia and Coconut Sugar)
8 Tbsp Natural Organic Crunchy Peanut, Cashew, Almond, Coconut, Tahini or any other Nut/Seed Butter of Your Choice)
Pinch Sea Salt OR Himalayan Crystal Salt (optional)
Making It Happen:
. In a warmed bowl or lightly heated saucepan, mix melted coconut butter, cocoa powder, vanilla, sweetener & salt together until smooth.
2. Pour a little bit of coconut/chocolate mixture into the bottom of 4 mini muffin tins, silicone candy moulds OR paper baking cups and put into the freezer for 1-2 mins.
3. Take out of the freezer and spoon 2 Tbsp nut/seed butter onto each cup
4. Place nut/seed butter in the centre if you do not want the peanut butter to show, or spread to the edges if you prefer a ‘sandwich look’ then pour the remaining melted chocolate over the 4 cups.
5. Place in the fridge or freezer for a few minutes until the chocolate has solidified, remove and top with your choice of nuts, seeds, dried fruit, coconut flakes, salt or any other topping that inspires you.
**Note, these stay fresh in the refrigerator for up to a month (or maybe longer…they just never last that long in our house) so they are great to keep on hand as treats!
